A Little Heat for Your Sweet
Our little Anna turns 1 on the 21st, so those of you with kids will understand why we are not going out for Valentine's dinner this year. Those of you who don't have kids can thank us now for staying home. You're welcome. We are going to have filet mignon with a spicy gorgonzola sauce tonight and probably some green beans or asparagus, whatever looks better. This recipe I found uses 1 teaspoon of chipotle chilies, I will just tell you now, I will probably use 2. Also, make the sauce first and just let it sit off the heat while you cook the steaks. Filet with Gorgonzola Sauce
1/4 pound shiitake mushrooms, stemmed and slice
1 1/2 cloves chopped garlic
3/4 cup whipping cream
1/2 cup (2 oz) gorgonzola
1 teaspoon chopped chipolte chilies in adobo
2 6-8oz filet mignons
olive oil
salt and pepper
Heat olive oil in a large pan over medium heat. Add mushrooms and saute until soft, about 5 minutes. Add garlic and stir around for about a minute. Add cream and bring to a boil. Reduce and simmer until thick enough to coat the back of a spoon, about 4 or 5 minutes. Stir in gorgonzola and the chilies. Season with salt and pepper.
Heat a cast-iron skillet if you have one or a regular skillet if not to high heat. Liberally salt and pepper the filets and add to the skillet and do not move around. Let them cook about 5 minutes per side for medium rare.
Pour sauce over steaks and enjoy.
