This is one of the better batches: nice fluffy crumb but still not crusty enough though...

- 3 cups unbleached, all-purpose white
- 1.5 cups warm water
- 1/4 ts traditional yeast
- 1/4 ts maple syrup
- 1/2 ts salt

- let rise for 12 hrs
- lay it out, folder over
- rest for 15+ mins
- roll into a ball thoroughly
- let rise for 3 hrs

- covered dutch oven, 425 F for 35 mins.
- uncover, then 365 F for 30 mins.
